To use the "Special Characters" option: Press Control + Command + Spacebar to open the "Special Characters" window. Then look for the °C symbol and select the symbol to paste it into your document.
You can also choose to type the symbol yourself. There are 3 different ways to do this, depending on how big you want the symbol.
Small : Option + K - Hold down Option and press K (Can be done with Option left and right).

To use ASCII codes: Hold down Ctrl + Shift and type u00b0. This inserts the ° symbol where the cursor is.
